ROASTED LEG OF LAMB

Serves 8

Leg of Lamb (2kg or 4-5lbs)
1 tsp. salt
75ml ( LA Trinity All-purpose Marinade)
1tbsp rosemary
2 tbsp dark rum (optional)

METHOD
1. Remove the thick skin and wipe meat
2. Marinate the lamb with salt, All-purpose Marinade, rosemary and dark rum (rub the marinade into the meat).
3. Allow the seasoned lamb to marinate for 2-3 hours in the refridgerator.
4. Place in hot oven at 400F for 20 minutes then reduce heat to 350F. Roast lamb for a further 2 1/2 hours turning every 45 minites.

Serve with mint sauce
